Thanksgiving Pies are now available for order until November 22!

Fall flavors are in full effect and before we know it Thanksgiving dinner will be on the table. Let us lend a helping hand this holiday season by adding a slice or two of our handmade pies to your Thanksgiving spread.

Behind every pie

About us

From the inception of Hatched in 2018, Allison has always focused on classic styles of baking. All her pies are made with a good helping of love and lard and rolled by hand. She pulls pie inspiration from her years spent on farms and in country life with her husband, Craig, and her life as a perpetual globe trotter. Together Allison and Craig have focused Hatched’s mission on utilizing local, seasonal flavors with unique modern flair.

With no permanent home yet, Allison and Craig hope to open a community focused gathering place for all pie lovers in the near future. Stay tuned!

Beyond the kitchen, you can find this pie loving pair spending time with their large pup, Paige, and curious kitty, Chewy, as well as cheering on all of Wisconsin’s sports teams. If you like a good story, be sure to grab a cup of coffee with these two to hear more about Allison’s time in Australia, Craig’s adventures in Southeast Asia and South America, and their 4.5 month long honeymoon that took them all over the southern half of the USA with their dog and no plan.

Curious why Allison named her bakery 'Hatched'? It all comes back to family. As a child, Allison's mother recalls her own mother coming home from the hair salon and remarking how she felt like a "fresh hatched owl" after a perm. Allison's mother took that phrase and adopted the meaning for anything new (i.e. an idea or a new baby) was then freshly hatched. And now, in the third generation, Allison has taken the word for herself. After many years of being a boomerang child and moving around the state, country, and world, she's finally taken root and doing things on her own terms. She now refers to her own kitchen renaissance as being "freshly hatched". From a freshly permed grandmother to a pie loving granddaughter, Hatched is more than just a silly name. It's about being new, using fresh ideas, and being true to who you are.

Q: Where are you located?

A:

Currently, we do not have a storefront. We are actively looking for a permanent home within the Milwaukee area. However, you can find a variety of our hand pies and other baked goods around the city and surrounding area.

Find our pie and some other goodies at Birch + Butcher, Vennture Brew Co, Pilcrow Coffee, Highlands Cafe, and Hawthorne Coffee. During the summer season, you can even find our pie in Door County at Ephraim Coffee Lab and Door County Creamery.

Q: How do I order a pie?

A:

Thanksgiving orders are open now! Click the "Order Here" emblem at the top of the page. For special orders outside of Thanksgiving, please contact info@hatchedmke.com. Pre-orders must be placed by 2pm each day, TWO DAYS in advance of the desired pick-up date. For example, to pick-up a pie on Friday, you would need to place your order by 2pm on Wednesday.

Q: Can I place an order for something other than pie?

A:

Of course! We offer sweet and savory scones as well as a variety of cookies and muffins. Please send all inquiries to info@hatchedmke.com.

Q: I'm getting married next year and I love pie. Do you cater weddings?

A:

Congratulations on your engagement! We'd love to help create the perfect dessert menu for your big day. Please fill out our event inquiry form or email info@hatchedmke.com

Q: Do you actually use lard?

A:

We do! We find the use of lard lends itself well to a more tender, flavorful, and flaky crust. At Hatched, we pride ourselves on vintage styles of baking and what better way to emphasize old fashioned baking than with lard.

Q: Can you make my pie gluten free? Vegetarian? Vegan?

A:

We offer gluten free hand pies at Vennture Brew Co every Friday. However, if you're looking for a special order or large event, we'd love to chat. Please email info@hatchedmke.com for more info.

Q: We have some allergy concerns in our house. Do you use nuts or eggs in your pies?

A:

Though not all of our pies contain nuts, we do process products in our facility that contain nuts. All of our pies contain egg in one form or another. However, we are able to make a few pies without. Please contact info@hatchedmke.com for a full list of egg free possibilities or if there are other allergy concerns.

Q: Should my pie be refrigerated?

A:

We feel our pies are at the their best when enjoyed at room temperature. Unless otherwise indicated on the box or packaging, we recommend pies to be stored at room temperature and enjoyed within 2 days of purchase. To increase shelf life, you can refrigerate fruit pies up to 5 days, custard/chess/nut pies (Salted Brown Butter Honey, Southern Pecan, Black Bottom Oat) up to 1 week, and meringue/whipped cream pies (Sweet Potato Coconut, Pumpkin Praline) up to 4 days.

Q: I'm interested in selling Hatched products in my shop. How do I get started?

A:
